Boil the pasta in plenty of well-salted water until become al dente. Strain, sprinkle with a little olive oil, and set aside to cool.
In a large bowl, whisk the olive oil of the dressing, the vinegar, the mustard, the thyme, the cumin, the salt, the pepper, and at the end add the yogurt.
When all the ingredients are at room temperature, add the pasta to the bowl with the dressing, mix well and add the steamed beets “Agrokipos Halvatzis”.
Crush the feta cheese on top and serve.
